VINIFICATION
Classic elaboration of destemmed and crushed grapes with long maceration periods and fermentation control.

AGEING
Aged for 30 months in American oak barrels and minimum 12 months in bottle before release.

TASTING NOTES

Pale yellow color, bright, with green hues. Intense and elegant, fresh and fruity aroma nuances, Blanquilla pear, banana and citrus. Also floral notes on a background of sweet spice aromas. An aromatic complexity that is a joint sensations in the mouth: fresh, balanced acidity, with volume and sweet. At the end we discover again its fruity anf floral character.

GRAPE VARIETIES

VINIFICATION
After a manual harvest grapes are transported to the winery in trailers up to 3.000 kilos. The must is obtined after a few hours of maceration of the grapes in membrane press without applying any pressure. Controlled fermentation at low temperatures in stainless steel tanks, followed by a long-term contact with the yeasts after fermentation to increase mouthfeel.

Straw-yellow with golden hues; very clean. Aromas denoting great finesse and personality. Notes of almond blossoms, honey and vanilla. Noticeable ageing perfume of fine wood. Honeyed palate dominated by a pleasant smoothness. Fortified notes are perfectly integrated into sweet tannins and just the right tanginess. Very savoury finish with exceptional persistence.

VINIFICATION
Late harvest with overripening and outbreaks of noble rot. Fermentation of free-run must in new oak barrels that stops spontaneously, resulting in a white wine with natural residual sugars. A unique experience that will be difficult to repeat.

AGEING
Aged for 16 months in 225 litre barrels. After bottling, the wine continues maturing positively over many years.
